Blueberry Lemonade

This delicious blueberry lemonade is sweet, tart and refreshing!

Ingredients

  • 1 cup blueberries fresh or frozen
  • ¼ cup maple syrup Agave syrup or granulated sugar can be substituted
  • 6 cups water divided
  • 1 cup lemon juice

Instructions

  • In a medium saucepan, stir together blueberries, syrup (or sugar) and ½ cup of the water over medium high heat. Bring to a gentle boil, then reduce heat as necessary to maintain a simmer. Simmer for approximately 5 minutes, or until berries have burst and are broken down.
  • Transfer the mixture to a blender and blend until smooth. *EXERCISE CAUTION when blending hot liquids. Hold down the blender lid while blending because hot liquids tend to expand and may possibly blow the lid off of your blender. Alternatively, an immersion blender may be used if you have one.
  • Strain the blueberry mixture through a fine mesh strainer into a large pitcher and allow to cool.
  • Pour the remaining 5 ½ cups of water and lemon juice into the pitcher and stir to combine. Serve immediately over ice or refrigerate until ready to serve.

Notes

This recipe yields approximately 7 cups.
