If you’ve ever tried the original Jack Frost Cocktail – you know just how dangerously delicious it is. After lots of recipe testing, I came up with a delicious alcohol-free version of this drink that everyone can enjoy!

Ingredients Needed
- Ice
- Pineapple juice
- Cream of coconut – Be sure to use cream of coconut and not coconut cream – they are not the same.
- Blue food coloring – This gives the mocktail its beautiful blue hue.
- Corn syrup and coconut flakes – for rimming the glasses.
How to Prepare

- Rim the glasses: Pour a small amount of corn syrup onto a small plate. On another small plate, place the coconut. Dip the rim of each glass into the corn syrup, then into the coconut.
- Blend the mocktail: Place the ice, pineapple juice, cream of coconut, and 6 to 8 drops of the food coloring in your blender pitcher. Cover and blend until smooth.
- Pour into the prepared glasses, and enjoy!
Common Questions
I typically use 8 drops. If you’re concerned about this drink being too dark blue, I’d start at 3 or 4 drops and add more until you’re happy with the color.
Honey, maple syrup, or agave nectar can be used in place of the corn syrup.
This recipe yields approximately 4 cups.
Cream of coconut is typically found in the drink mixers aisle of the grocery store.

Ingredients
For rimming the glasses:
- 2 tablespoons light corn syrup
- ¼ cup sweetened coconut flakes
For the mocktail:
- 6 cups ice
- 1 cup pineapple juice
- ½ cup cream of coconut NOT coconut cream
- 6 to 8 drops blue food coloring (I use 8)
Instructions
- Pour the corn syrup onto a small plate. On another small plate, place the coconut. Dip the rim of each glass into the corn syrup, then into the coconut.
- Place the ice, pineapple juice, cream of coconut, and 6 to 8 drops of the food coloring in your blender pitcher. Cover and blend until smooth. Add more food coloring until your desired color is reached.
- Pour into the prepared glasses, and enjoy!
